For Gobhi Paneer Paratha
Ingredients – Paratha
- Wheat flour – 2 cups
- Salt – according to taste
- Oil – 1-2 tsp
- Water – according to the need to bind the dough
Ingredients – Filling
- Cauliflower – 1 Cup (grated)
- Paneer – 1 Cup (grated)
- Green chillies – sliced thinly (or as per taste)
- Coriander – ½ cup (chopped)
- Salt – according to taste (adjust as dough also has salt)
For Dough –
To knead dough, mix flour with salt and add little water in to it and start mixing the dough. Add water in to the mixture according its need continue to mix in to it with your hands and collect it together. The flour should not be very tight and nor much sticky. You can use some also on to it and knead it well. Continue to need until the upper layer of the dough becomes smooth. Once it is done, keep the dough aside for some time.
The amount of water should always be half of the amount of flour. Large amount of water makes the dough sticky when you are preparing chapattis.
For Paratha –
Mix all the ingredients for filling together. Now, place tawa on the gas to get heated and make the small ball of dough with your hands in a size of a lemon. Place the ball in dry flour and remove the excess out of it.
Now place ball on the board to roll it in the size of 3-4 inches. Now take small amount of filing in the centre of the circle. Bring the ends of the upwards closing it all together as a ball. Once the filing is covered with the dough. Apply some dry flour on to the dough ball and keep on the board. Press the ball with your palm to flatten the ball and roll it using the rolling pin very gently so that filing should not burst. You can keep the thickness of the paratha according to your choice.
Now place the paratha on to the heated tawa and flip it to the other side, once it start changing its colour. You can notice few golden brown spots on the parathas. Once the downside of the paratha is cooked, flip it again. Now, dribble some oil or ghee on the top of the paratha and flip once again. Let it get cooked for 1-2 minutes. Once done, cook it from other side again (It’s your choice if you want to trickle ghee or oil again). Gobhi Paneer Paratha is ready to serve now.
Serving Tip –
Serve hot gobhi paneer paratha with butter/ghee and curd/raita in breakfast to taste good.
