For GolGappa /pani puri –

Ingredients:

Puri:

  1. Sooji – 1 cup
  2. Maida – ¼ cup
  3. Baking soda – ¼ tsp
  4. Salt – according to taste
  5. Oil – for frying

Pani:           

  1. Mint leaves – ½ cup
  2. Coriander leaves – ¼ cup
  3. Tamarind paste – 2 tsp
  4. Hing – 1/4 tsp
  5. Red chilli powder – 1 tsp
  6. Roasted cumin powder – 1 tsp
  7. Chaat powder – 1 tsp
  8. Black salt – according to taste
  9. Sugar – 2 tsp
  10. Water – 2 Cups
  11. Boondi – ½ Cup

Stuffing:

  1. Potato, boiled and cubed – 1 large
  2. White chickpeas – ½ cup chopped
  3. Roasted cumin powder -1/2 tsp
  4. Chaat masala – 1 tsp
  5. Red chilli powder – 1 tsp
  6. Chopped coriander leaves – 1 tsp
  7. Salt – according to taste

Method :

To make puri:

1. In a bowl, mix sooji, maida, baking soda, salt and mix them well. Add water slowly and knead to stiff dough. Cover and set aside for 30 minutes.

2. Divide the dough into lemon sized balls. Roll out the ball into a thin circle using rolling pin. Cut out round discs using a small bowl and continue making it with complete dough.

3. Heat oil in a kadai and fry the puris. Puris will start to puff and turn golden brown. Then flip them and cook them until it turn golden brown.

4. Drain the excess oil on a tissue paper. Cool and store the puris in an airtight container.

To make pani:

1. Grind washed mint leaves, coriander leaves, tamarind, hing adding little water to a smooth paste.

2. Transfer the paste to a large bowl and add water. Add red chilli powder, cumin powder, chat powder, black salt and mix well.

3. Chill the pani and add the boondi.

To make stuffing:

1. In a bowl, mix the potatoes with cumin powder, ½ tsp red chilli powder, chat masala, salt and coriander leaves.

2. In another bowl, mix chickpeas with ½ tsp red chilli powder and salt.

To assemble pani puri:

Crack the center of the puri with your thumb or a spoon. Stuff with boiled potato and chickpeas. Dip in the pani and serve immediately.
