Sindhi Vegetable Curry

For Sindhi Vegetable Curry –

Ingredients –

  1. Methi Seeds – ½ tsp
  2. Cumin seeds – 1 tsp
  3. Mustard seeds – ½ tsp
  4. Potatoes (medium) – 2 (diced)
  5. Bhindi – 4
  6. Green Beans – 5 to 6
  7. Cauliflower – 4 to 5 florets
  8. Capsicum (medium) – 1 (diced)
  9. Carrot (medium) – 1 (diced)
  10. Tomato (medium) – 1 (diced)
  11. Peas- 1 tsp
  12. Kokum – 3-4
  13. Curry leaves – 3-4
  14. Besan- ½ cup
  15. Cooking Oil – ½ cup
  16. Tamarind pulp- 1tsp
  17. Salt – according to taste
  18. Chilli powder- 1 tsp
  19. Turmeric Powder – ½ tsp
  20. Coriander Leaves – 2-3 tsp

Method –

  1. In a heated pressure cooker, pour cooking oil to it and add fenugreek seeds, kokum, cumin seeds, mustard seeds, curry leaves.
  2. When it starts crackling, add the besan and sauté on medium flame till turns reddish brown. Add ½ litre water and the spices to it (chilli powder, turmeric and salt to taste).
  3. Add the vegetables and tamarind pulp, pressure cook for one whistle. Turn off the flame and let it release its pressure on its own.
  4. Once you open the lid, check it needs more water and if yes add some boiled water to it  and cook for another 5 minutes without lid.
  5. Garnish the recipe with coriander leaves and Sindhi Vegetable Curry is ready to serve.

Serving Tip –

Enjoy it with steamed rice and papad.
