Vegetable Poha

For Vegetable Poha –Ingredients –

  1. Poha – 2 ½ cup
  2. Mustard Seeds – ½ tsp
  3. Curry leaves – 10-12 leaves
  4. Green chili – 2-3
  5. Peanuts – few seeds
  6. Capsicum – 2 small (chopped)
  7. Carrot – 2 (chopped)
  8. Green Peas – ¼ Cup
  9. Potato – 1 (chopped)
  10. Onion – 2 (chopped)
  11. Salt – according to taste
  12. Red chili – ½ tsp
  13. Turmeric Powder – ½ tsp
  14. Garam Masala – ½ tsp
  15. Oil – to cook
  16. Sugar – 1 tsp (optional)
  17. Lemon – 1

Method –

Clean the Poha and wash it in a colander. Keep it moist not mashed. Drain the water properly from colander and leave it aside. Add little salt and sugar in moist poha.

Now, take a kadai and pour some oil in to it to get heated. Add mustard seeds, curry leaves, green chilies and peanuts in to it. Once it start to splutter add potatoes to it and stir it until it becomes golden brown in colour. Now add balance vegetables to it (Capsicum, Peas, Carrot, and Onion etc). Now stir all vegetables for 1-2 minutes and add little salt, red chili, turmeric and garam masala to it and mix well. Once the masala seems to be cooked add the moist poha to the kadai and mix it well until poha gets the proper coating of turmeric and becomes yellow in colour. Vegetable poha is almost ready, before switching off the gas, you can squeeze lemon in to it and mix lightly. You can even garnish it with coriander leaves. Vegetable Poha is ready to serve.

Serving Tip –

Serve it hot in breakfast with tomato sauce by garnishing it with bikaneri sev on the top.
